Sweet and Sour Cucumbers

Hungarian style cucumbers

Chef’s note: This was served as a palate cleanser at a restaurant in New York, called HUNGARIAN RENDEVOUS I think my readers like this so much because it is a flash to fix and the bang for the flavor buck is enormous. Enjoy!

This recipe makes four servings (each serving contains 2 grams of carbohydrates)

2 medium cucumbers
3 Tbsp. Red wine vinegar*
5 Tbsp. or equivalent sugar replacement

HOW TO PREPARE THE RECIPE:

Mix the vinegar and sugar substitute together until dissolved. Taste for sharpness. And adjust for your personal taste. Peel and very thinly slice the cucumbers. Add to the vinegar and toss. Cover and let stand at room temperature for at least half an hour but up to 6 hours is also fine. Just toss now and then to distribute flavors.

*You can substitute apple cider vinegar if you don’t use wine vinegar. It is still wonderful, just not exactly the same.
